Three delicious Ethiopian dishes.

Shiro

Ingredients:

  • 1 cup ground chickpeas or lentils (Shiro powder)
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons oil
  • 1 tablespoon berbere spice
  • 1 teaspoon ground cumin
  • 4 cups vegetable or chicken broth
  • Salt and pepper to taste

Instructions:

  1. In a pot, sauté the onions and garlic in oil until golden brown.
  2. Add berbere spice and cumin, stirring continuously for 2-3 minutes.
  3. Mix in Shiro powder, then gradually add broth while stirring to avoid lumps.
  4. Simmer for 20-30 minutes until the mixture thickens.
  5. Season with salt and pepper to taste.

Special Kitfo

Ingredients:

  • 1 lb finely minced beef
  • 2 tablespoons clarified butter (niter kibbeh)
  • 1 tablespoon berbere spice
  • 1 teaspoon ground cardamom
  • Salt to taste
  • Injera (Ethiopian flatbread) for serving

Instructions:

  1. In a pan, melt the clarified butter.
  2. Add berbere spice, cardamom, and salt. Cook for a few minutes.
  3. Mix in the minced beef and cook until browned.
  4. Serve the Kitfo on injera and enjoy!

Dorowet (Ethiopian Chicken Stew)

Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 large red onions, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons berbere spice
  • 1 tablespoon paprika
  • 1 teaspoon ground ginger
  • 1 cup chicken broth
  • Salt to taste

Instructions:

  1. In a pot, sauté onions and garlic until caramelized.
  2. Add berbere spice, paprika, and ground ginger. Cook for 2-3 minutes.
  3. Add chicken pieces and brown them on all sides.
  4. Pour in chicken broth, cover, and simmer until the chicken is cooked.
  5. Adjust salt to taste.

Serve Shiro, Special Kitfo, and Dorowet with injera or rice for a complete Ethiopian meal. Enjoy your cooking!
